Southern Pecan Cookies
This recipe for pecan cookies hails from middle Tennessee, from my mom's best friend of 60+ years. They are delicious!
Ingredients
- 1 cup salted butter
- 1 cup pecan meal
- .5 cup sugar
- 1.5 cups plain flour
- .5 tsp. salt
- 2 tsp. vanilla
Directions
- Preheat oven to 350°F.
- Blend all ingredients well in order listed.
- Shape into a roll about 2" in diameter.
- Wrap in wax paper and refrigerate until time to bake.
- Before baking, remove from refrigerator and slice dough in about 1/4" slices.
- Bake on an ungreased cookie sheet, 1" apart.
- Check on cookies at about 14-15 min.
- Let set a couple of minutes before removing to cooling racks. Cool completely before storing.
